Spanish Chicken and Rice Soup

What a heatwave this has been. With no end in sight to the scorching temperatures, This Spanish Chicken and Rice Soup is absolutely perfect for the family. This Spanish Chicken and Rice Soup is amazing when you are using a  slow cooker. No heat! No worry, just prep it, set it and walk away to enjoy the coolness of the house or whatever your sweltering day is going to bring you!

This Spanish Chicken and Rice Soup is simplistic in preparation yet leaves your mouth and your tummy with a feeling of a much more complex meal more suited to eat at a restaurant. Your kids you ask? P and I have some of the pickiest of eaters and let me tell you, they all devour this meal to the point of zero leftovers and P cooks in bulk, every meal. Your picky eaters will be no more after this Spanish Chicken and Rice Soup because this soup my friends? This is the soup that you can hide a whole lot of veggies they dislike and if you’re anything like P, you’ll use the shredder too!

Oh wow, I may just have drooled a little. Yep, I sure did! Spanish Chicken and Rice Soup is chalked full of veggies my kids hate on the average day. Onions? NEVER! Green Peppers? Same thing, these guys literally hate these veggies yet somehow there is never a complaint with them being here in this Spanish Chicken and Rice Soup. What a huge win.

Let’s get making some soup!

Prep Time- 12 minutes

Cook Time- 4 hours

Servings- 4


  • 2 tsp olive oil
  • 1lb boneless skinless chicken breast, cubed
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 onion diced
  • 1 green pepper diced
  • 1 jalapeno seeded and diced
  • 2 cloves minced garlic
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 2 cans chicken broth
  • 1 can diced tomatoes
  • 1 cup frozen corn
  • 1 cup brown rice
  • 1 tbsp lime juice


  1. In a skillet, heat olive oil to medium-high heat and brown chicken breast, season with salt and pepper.
  2. Add chicken, onion, green pepper, jalapeno, garlic, chili powder, cumin, chicken broth, tomatoes, corn, rice, and lime juice into a 6qt slow cooker.
  3. Cover and cook on high for 4 hours.
  4. Spoon into bowls and garnish with avocado, cilantro, sour cream, or tortilla chips.
